Chocolate chip cookies have always been a childhood favourite of mine. I remember how much my brothers and I looked forward to packs of Chips Ahoy! from Duty Free when someone camehome from overseas. They are so delicious.
Homemade cookies are, of course, another story. Nothing beats the smell of freshly baked cookies! They are simply hard to resist. Since moving to New Zealand, a new place to call home, I had been looking forward to baking a batch of chocolate chip cookies. I finally had the chance to bake them for a family reunion at Jon’s granddad’s place. It was my first time to bake with this recipe so I was very happy they turned out perfectly. Even with other scrumptious desserts on the table, it was hard to resist this all time classic.

If you love to bake, it’s a must to have a good chocolate chip cookie recipe up your sleeve. You never know when you’ll need it. Chocolate chip cookies are great for snacks and they also make great gifts (they are easy to make and transport well). This is my favourite chocolate chip cookies recipe so far. Here’s how I made them:
Ingredients
- 2/3 cup unsalted butter softened (150 g)
- 1/2 cup light brown sugar (90 g)
- 1/4 cup granulated sugar (50 g)
- 2 tsp vanilla extract
- 1 free range egg
- 1 1/2 cup plain flour (225 g)
- 1/2 tsp bicarbonate of soda
- 200 g plain chocolate chip or chunks
Instructions
Preheat the oven to 190 °C. Line two baking trays with non-stick baking paper.
Place the butter, brown sugar and white sugar into a bowl. Beat until creamy. Beat in the vanilla extract and egg.
Sieve the flour and bicarbonate of soda in a bowl. Mix with a wooden spoon. Stir dry ingredients to wet ingredients.
Do not over mix. Fold in the chocolate chips.

Scoop the mixture with a teaspoon and drop onto the prepared baking sheet, space about 1 1/2 inches apart. Bake in the oven for 8 mins until light brown on the edges and still slightly soft in the center.

Leave cookies on the tray for a couple of minutes to firm up then transfer to a cooling rack.
