Chocolate Chip Cookies Recipe

When it comes to snacks, nothing beats a chocolate chip cookie! This easy to follow recipe makes a delicious batch of soft, chewy chocolate chip cookies that are truly hard to resist!

Ingredients
  

  • 2/3 cup unsalted butter softened (150 g)
  • 1/2 cup light brown sugar (90 g)
  • 1/4 cup granulated sugar (50 g)
  • 2 tsp vanilla extract
  • 1 free range egg
  • 1 1/2 cup plain flour (225 g)
  • 1/2 tsp bicarbonate of soda
  • 200 g plain chocolate chip or chunks

Method
 

  1. Preheat the oven to 190 °C. Line two baking trays with non-stick baking paper.
  2. Place the butter, brown sugar and white sugar into a bowl. Beat until creamy. Beat in the vanilla extract and egg. Sieve the flour and bicarbonate of soda in a bowl. Mix with a wooden spoon. Stir dry ingredients to wet ingredients. Do not over mix. Fold in the chocolate chips.
  3. Scoop the mixture with a teaspoon and drop onto the prepared baking sheet, space about 1 1/2 inches apart. Bake in the oven for 8 mins until light brown on the edges and still slightly soft in the center.
  4. Leave cookies on the tray for a couple of minutes to firm up then transfer to a cooling rack.
